Monohon Ramen brings more pop-ups to London this October and November 2015

Do you like Ramen? Oh nom nom nom. Londoners who do are in for a treat as they can visit some of the up coming ramen pop ups being run by Monohon Ramen. The first appears at 7:15pm on Saturday 17th October 2015 in a traditional pie and mash cafe F. Cooke on Broadway Market.
They'll also be running two sittings at Rouge one at 5:30pm and the second at 7:00pm on Sunday 1st November 2015. Where they'll be serving a lesser known Japanese ramen dish Abura soba. During this event, they will give a demonstration of the dish and customers will get a chance to assemble their own bowl.
All the pop-ups require booking in advance and cost £10 a head, which includes the ramen, plus a side dish. All events are bring your own bottle.

Monohon Ramen Pop ups
A new Japanese ramen bar 'Monohon', founded by head chef Ian Wheatley, opens its doors to a series of pop ups in Hackney.
The pop ups are currently organized in the space of F-cooke, a classic pie and mash café and Toconoco, a Japanese café off Regent's Canal. Chef Ian will be serving up two varieties of tonkotsu (pork-bone) ramen: shio (salt) and shoyu (soya sauce). Unlike western soups, tonkotsu is cooked at a rolling boil for many hours to emulsify fat into the soup. The result is a whiter colour and a rich, creamy texture. To it he adds the Monohon signature tare (secret seasoning). The fine balance between the tare and the broth makes a classic tonkotsu ramen.
The in-house made noodles are then added to the boiling soup and served with toppings of chashu (braised pork slices), wood-ear mushrooms, bean sprouts and spring onions. Customers are encouraged to dig in as soon as it is served to retain the bite of the noodles, hence the slurp!
There are also additional toppings to purchase such as Ajitsuke Tamago (marinated soft boiled egg), beni-shoga (pickled ginger) or have the complete works of 4 extra toppings, zenbu-nose, as they say in Japanese. In addition to the ramen, a £10 ticket also includes a side dish of edamame and customers are welcomed to bring their own bottle.

With autumn approaching, hearty dishes such as ramen become increasing popular. In future pop-ups, Monohon plans to offer Miso Ramen, Tsukemen (dipping ramen) and Abura Soba (a soup-less ramen).

ROUGE 10th anniversary featuring Monohon Ramen
As part of ROUGE's 10th anniversary celebrations, Monohon Ramen will serve Abura soba on November 1 at the store in Stoke Newington.
Hugely popular in Japan, but largely unknown in London, Abura soba is a soup-less ramen. The noodles are thick and chewy and it comes with a sesame-oil based sauce. Toppings include slow braised pork, onsen-tamago (very soft poached egg), crispy fried shallots, menma (marinated bamboo shoots) and more. The toppings, sauce and noodles are mixed together before you dig in. During the event, Monohon Ramen will give a demonstration of the dish and customers will assemble their own bowl. In addition to the ramen, a £10 ticket also includes a side dish of edamame and customers are welcomed to bring their own bottle. There will be two seatings on the day.
